I made these Raspberry & Cream Cheese Mini Toasts for my tea party last Saturday. I will have a post including all my recipes soon, but I wanted you to have this one in time for Valentine’s Day.
This is the easiest dessert or snack ever. No baking or culinary skills necessary. It literally takes a few seconds to make each one. So, in about a minute, you have a pretty snack or dessert for your special someone.
These would also make a great addition to a summer barbecue when you have more berries than you know what to do with from the farmer’s market or CSA.
Raspberry & Cream Cheese Mini Toasts
- 6 oz. fresh raspberries
- 4 oz. cream cheese (or more if you want a thicker spread)
- 30 whole wheat mini toasts* (the kind used for pate or caviar)
Spread cream cheese on toast and pop a berry on top. It’s that easy!
*Make sure you read the labels on the toast. Bread can have a lot of yucky ingredients if you are not careful. I have to admit, I was in a rush and the ingredient list on my toasts was not 100% clean.
Another note on the toasts. They are crunchy and crumbly. If you’d prefer them soft, prepare ahead and put in the refrigerator for an hour and the toast will soften.
If I had more time, I would’ve made these graham crackers from Seasoned Mom instead of using the mini toasts (sub coconut oil for canola in the recipe). You would need to use a pretty tiny cookie cutter or cut in squares with a pizza cutter, but I think it would be worth the effort. Next time!
