I’ve been so busy. Working and blogging is very time consuming. Crock pot meals are great go-to recipes when life starts going too quickly. It also is a great go-to blog post for the busy blogger. I can knock out a recipe post way quicker than my other posts. Oops. I just gave away my trick…recipe posts = The Wellness Wife is having a busy week! Most people like new recipes, so hopefully it’s a win for everyone!
Here is one I prepared a couple of weeks ago. We don’t eat meat in our house much anymore. Even before we started switching over to a more vegetarian diet, we didn’t consume beef regularly. But, I have to say, this recipe was really tasty. The beef cubes were moist and the flavor was great.
If you are consuming beef, make sure you buy organic, grass-fed beef.
Crock Pot Beef Cubes in Red Wine Sauce
- 1 1/2 lbs. beef cubes
- 2 shallots, diced
- 6 carrots, sliced
- 1/4 c. red wine
- 1 tbsp. butter, diced
- salt and pepper to taste (I used Celtic sea salt and course ground pepper)
Sprinkle beef cubes with salt and pepper and brown in a skillet on medium-low temperature. You are not trying to cook all the way through, just enough to get the pink off of the outside. This lessens the time you need in the crock pot, and more importantly, keeps some of the grease out of your crock pot. Cook for 5-10 minutes depending on the thickness of the cubes. Then transfer to the crock pot. Add carrots, then shallots. Add red wine. Top with the butter. Cook on low for about 5 hours. I recommend serving over barley.
