I found a recipe on Pinterest for Cheesy Quinoa and Broccoli Patties from Shopgirl that looked and sounded awesome. I pinned it with the intention of making them soon. Lots of people repinned the recipe. I made them last week, but in typical Wellness Wife fashion, the recipe barely resembled the original by the time I was done with it. So, I decided to share the original and the new creation with you so you have both.
We had eaten quinoa a few times over the past couple of weeks, so I decided to use bulgur. I pretty much changed everything else, too.
Bulgur and Broccoli Patties with a Kick!
(adapted from Cheesy Quinoa and Broccoli Patties)
- 1/2 c. uncooked bulgur (prepare per the package recommendations)
- 1 small head of broccoli (chop just the florets very finely)
- 1 small onion, diced
- 1/4 c. flax seed meal
- 3/4 c. shredded pepper jack cheese
- 2 eggs
- 1/4 tsp pepper
- 1/2 tsp Celtic sea salt
- 1 tbsp olive oil
Follow the link to the original recipe for the directions. I used my cast iron pan. The way I made them varied a bit because I did not wait for anything to cool as stated in the original directions. I didn’t have the time. They still turned out great!
I’m overstating the “kick” a bit because the pepper jack cheese wasn’t that spicy, but it definitely added some heat and flavor! If you’re not a fan of spicy foods or are wanting to make these even healthier, substitute mozzarella.
These were great left over and would be a perfect lunch meal! Definitely pinworthy!
