Looking for a great way to use all of those wonderful berries that are coming into season? Looking for a lighter, healthier dessert for your Father’s Day cookout? Just in time for the weekend, here is your answer – The Wellness Wife’s Berry Parfait with Homemade Whipped Cream.
Remember to buy organic or at least defer to the Environmental Working Group’s Dirty Dozen when buying berries. Strawberries are second on the list. Also, you can find organic whipping cream for a very reasonable price at Trader Joe’s.
If you’ve never made your own whipping cream, you must start. It’s SOOOOOOOOOOO easy. For added incentive, read the back of Cool Whip sometime. Some pretty awful ingredients in there…
The pomegranate arils give an added crunch. If you can’t find these or don’t care for them, you can sprinkle some chia seeds on top of the parfait to add some crunch, fiber, and protein. For more info on chia seeds and another great parfait recipe visit my post Why I Love Chia Seeds.
- 1 lb. strawberries, sliced
- 6 oz. raspberries
- 6 oz. blueberries
- 3 oz. pomegranate arils
Wash all berries and dry with a lint-free cloth. You may want to be non-eco-friendly with the raspberries and use a paper towel because they may stain your cloth. Add strawberries, blueberries, and arils to your bowl and toss. Put the raspberries on top because they will get crushed otherwise. When I served this dessert, I put out a second bowl with the remainder of the raspberries so everyone could mix in more as they pleased.
Homemade Whipped Cream
- 1 pint organic whipping cream
- 3 tsp. raw, organic honey (can also be found for cheap at Trader Joe’s)
Beat with a hand mixer until desired consistency. This should only take a couple of minutes. Add more honey if you want a sweeter whipped cream, but don’t add too much! The whipped cream should enhance the berries, not detract from them! Leftovers may need a re-whip.
Make into a parfait by alternating berry mix and whipped cream. Top with a few extra berries for presentation. If using chia seeds, sprinkling some on top will add to the presentation also.
