When I heard October 7 was National Kale Day, I knew I had to provide my readers with some tasty kale recipes so they could celebrate. I hope everyone will be making one of these recipes (or their own favorite kale recipe) on the 7th!
If you’re new to kale or don’t particularly care for kale, watch How to Massage Kale from My Whole Food Life. Sounds strange, but if you “massage” your kale, it will have a better texture.
Why eat kale? According to the National Kale Day website, one cup of raw kale provides:
- 134% of your daily vitamin C
- 684% of your daily vitamin K
- 204% of your daily vitamin A
- an excellent source of calcium and iron
I think you get the idea why kale is so trendy. Now, go buy some kale and cook up one of these great recipes.
